Freezing Corn
Freezing sweetcorn was something we did every summer when I lived at home. My family, grandparents, aunts, uncles and cousins would all get together and help out with this process. We'd pick and shuck the corn in the morning and work until we got it all in freezers. There were several jobs to choose from: rinsing and scrubbing off the silks, cutting the corn off the cobs, filling the skillets, cooking the corn, cooling it in pans, writing the year on the freezer bags, filling the bags, and running the buckets of cobs out to the pigs. This event has changed over the years, and most families just freeze their own corn. I just happened to be around the last time my mom needed to freeze some corn. I think she planned it around the day I was home because she wanted help! I enjoyed helping out.
